Honey Lemon Grilled Chicken Salad

Salad
- 1 pound of skinless boneless chicken breasts cut into cubes
- 4 cups romaine lettuce, washed and dried
- 1 red onion sliced
- 1/2 cup shaved parmesan
- 2 tablespoons of ranch dressing (primal brand is a clean option)
- lime slices
- 3 Tablespoons oil
- 2 Teaspoons onion powder
- 2 teaspoons garlic powder
- 1 teaspoon cayenne pepper
- 1 teaspoon salt
- 1 teaspoon paprika
- 1/2 teaspoon cracked pepper or to taste
- Juice or zest of half a lemon (1/4 cup freshly squeezed lemon juice)
- 1 tablespoon honey
- 2 teaspoons garlic, minced
- 1/2 cup of butter, melted
- 2 tablespoons fresh chopped spring onion
- 1 tablespoon sriracha
Directions:1. To make the grilled chicken salad, combined all the marinade ingredients in a large bowl.
2. Add the diced chicken to the marinate in the bowl, marinate the chicken for 15-20 minutes (more if you have time).
3. Arrange salad, red onion, and parmesan in a large bowl. In a small bowl, combine the ingredients for the lemon honey sauce.
4. Once the chicken is ready, heat one tablespoon of oil in a grill pan over medium-high heat. Grill the chicken on all sides until browned and throughly cooked through. Brush the grilled chicken with the honey lemon sauce.
5. Arrange grilled chicken on top of the salad. Drizzle the grilled chicken salad with more of the honey lemon dressing or ranch sauce. Serve with lime slices! ENJOY!
