Margarita Chicken
Ingredient list:
(Purchase organic ingredients when possible)
- 1/2 Teaspoon of freshly ground black pepper and salt
- Zest of 1 lime grated
- Fresh Juice of 2 Oranges
- 1 tablespoon of raw honey (melted)
- 4 cloves of garlic chopped
- 3 tablespoons olive oil
- 1 1/2lbs boneless skinless chicken thighs or breasts
- Cilantro for garnish
- Sliced avocado for garnish
Instructions:1. Add the salt and pepper, lime and orange zest to a medium bowl and whisk in all the juice, honey, garlic and olive oil.
2. Place the chicken in a large bowl or ziplock bag. Reserve 1/2 cup of the marinate and then pour the rest over the chicken. Cover and refrigerate for 1 to 4 hours. Refrigerate the 1/2 cup of marinate separate to baste with while grilling.
3. Remove the chicken from the marinate, discard marinate and grill over medium- medium high heat. Adjust the heat a necessary so you do not burn the outside of the chicken. Baste the chicken with the remaining 1/2 cup of marinate while grilling. You can also cook the chicken in a skillet to pan fry.
4. Serve garnished with more lime, avocado, and cilantro over rice, your favorite vegetable, or a green salad!
